Snowy Day Treats!

Believe it or not, it actually happened. . .again!  We had snow on Christmas Day just 2 weeks ago, and this morning we have snow again!!  Currently there are about 7 inches out there and more is possible. . .but not likely!  At least we still have our electricity and internet service.  And we won’t run out of those southern winter storm  staples of bread and milk.

When we do get snow here in the south, I like to treat my family to Snowy Day Donuts.  I have 2 recipes that I’ve used, but will post just the one I made today.  Served with a cup of hot cocoa, they certainly help to warm the body up after playing in the snow.  This recipe comes from my favorite cookbook, The Fannie Farmer Cookbook, 1990.

2 pkg. dry yeast

1/3 c. warm water

1 1/2 c. milk

1/3 c. shortening

1/4 c. sugar

2 tsp. salt

2 tsp. nutmeg

2 eggs, lightly beaten

4 1/2 c. flour

1/2 c. melted butter

1 c. sugar mixed with 1 tsp. cinnamon

Sprinkle the yeast over the warm water in a small bowl and let it dissolve for 5 minutes. Put the milk and shortening in a saucepan and heat until shortening melts. Cool to lukewarm. Pour yeast mixture into a large mixing bowl and add the milk mixture. Stir in the 1/4 c. sugar; salt, nutmeg; eggs and 2 c. flour. Beat briskly until well blended. Add remaining flour and beat until smooth. Cover the bowl and let double in bulk, about 1 hour. Dust a board generously with flour and turn the dough mass onto it.  This dough is soft and needs enough flour on the board to prevent sticking, but is easy to handle. Pat dough into a round about 1/2 inch thick. Using a 3-inch cutter, cut out the doughnuts, placing them and the doughnut holes on greased baking sheets, 1 inch apart. Preheat oven to 450. Let doughnuts rise for 20 minutes, uncovered. Bake about 10 minutes, or until they have a touch of golden brown. Brush with melted butter and roll in sugar/cinnamon mixture.  You can also dust with powdered sugar instead of rolling them in the sugar/cinnamon mixture.  Serve warm with a cup of hot cocoa.
