Tonight’s recipe comes from my Great American Recipes cookbook. I tried it about a year or so ago and got raving reviews from the family. I’m glad that I remembered it for tonight when I was wanting something a little different from the same old mashed potatoes! This recipe can be varied by using sweet potatoes, new potatoes, or even a mix of several varieties.
2 lbs. potatoes
1/4 cup plus 1 tbsp. olive oil
1 tbsp. minced garlic
1 tbsp. Italian seasoning
1 tsp. cayenne pepper
1 tsp. black pepper
1 tsp. salt
Grated Parmesan cheese
Pre-heat the oven to 400 degrees. Scrub potatoes, then cut them into even-size wedges. Combine the olive oil and seasonings in a gallon-size resealable bag. Add the potato wedges to the bag, seal it, and shake well to coat the potato wedges.
Spread the potatoes in single layer on a large baking sheet. Bake for 20-25 minutes, turning wedges about halfway through the baking time. Sprinkle the Parmesan cheese over the potatoes and bake about 10 minutes more or until golden and crisp. Serve hot.
