I must confess that it has been harder for me lately to remain interested in not only cooking but also blogging about what I cook! I guess I am just in a bit of a slump knowing that I am in my last 2 weeks of having Barbi here at home before she flies the coop and gets settled in her own apartment in Savannah. I know that I have been privileged to have had her still at home through her college years when most of my friends have had to let go at the start of their children’s college days. Letting go is never easy, but it’s time. I know she will continue to blossom and grow into a lovely young lady.
It has been a few weeks since I did a Sunday dinner dessert, so on Saturday I really did try to give it some thought! I found a recipe on the side of a cake mix box which sounded great. Any time I can doctor up a cake mix makes me happy! So here is the recipe with a few tweaks of my own.
Chocolate Streusel Cake
Filling:
2 tbsp. of yellow cake mix
2 tbsp. brown sugar
2 tsp. cinnamon
1 c. chopped nuts
Cake:
4 large eggs
1 c. sour cream
1/3 c. vegetable oil
1/4 c. water
1/4 c. sugar
remaining yellow cake mix
Preheat oven to 375. Grease and flour a 10-inch bunt pan. Mix ingredients for filling in a small bowl and set aside. Add all ingredients for the cake in a large bowl. Mix at medium speed for 2 minutes.
Pour 2/3 of batter into prepared pan. Sprinkle with filling. Spoon remaining batter evenly over filling. Bake for 45-55 minutes or until toothpick inserted comes out clean. Cool in pan for 25 minutes. Invert onto cooling rack and cool completely. Cover with chocolate frosting and decorate as you desire.
