With our blueberries just now beginning to ripen, nothing tastes better than fresh berries used in baking! This morning I picked the first of our ripening berries!
Having these available gave me the idea to use a ripe banana and make some muffins for breakfast. I found my basic recipe in my favorite cookbook, Fanny Farmer, but made changes to incorporate the fruit. Hope you enjoy it!
1-1/2 c. flour
2 tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 c. milk
1 egg, beaten
2 tbsp. butter, melted
1 c. cooked oatmeal
1 ripe banana
1/2 c. blueberries
Preheat oven to 400 degrees. Grease muffin pans. Combine flour, sugar, baking powder, and salt. In a separate bowl, stir the milk, egg, butter, oatmeal,and mashed banana. Mix well. Fold in blueberries. Fill muffin cup about 2/3 full of batter. Bake for 20 minutes or until toothpick comes out clean.
