If you are looking for an easy dessert to make to help your family celebrate the 4th of July, this one should be it. It does need time to set firmly, but a few hours in the fridge does just that. It is cool and refreshing for a hot summer day.
1-1/2 c. boiling water, divided
1 pkg. (4oz) blue colored gelatin
1 pkg. (4oz) red colored gelatin
1 cup ice cubes, divided
1 graham cracker pie crust, frozen
1 c. thawed whipped topping
Stir 3/4 c. boiling water into the blue gelatin mix and stir about 2 minutes or until dissolved. Add 1/2 c. of ice cubes and stir until melted. Pour into frozen pie crust; refrigerate about 10 minutes or until gelatin is set but not firm.
Stir remaining boiling water into the red gelatin, stirring until dissolved. Add remaining ice cubes and stir until melted. Cool in fridge about 10 minutes.
Spread whipped topping over the blue gelatin, sealing it around the edges. Carefully pour the red gelatin over the top of the whipped topping. Refrigerate until set, about 2 hours. Serve with a dollop of whipped cream and blueberries or strawberries.

Cream cheese would taste amazing as a filling instead of whipped topping! Great idea!
I would probably mix the CC with the whipped topping to make the CC a little lighter. Just LOVE that tart taste of cream cheese in anything!!!
