A very common question in my house is “What’s for supper?” Sometimes I hear this as early as 3:00 in the afternoon! Earlier this week when the hubby asked this question, I just asked him what he wanted to see what he would say. This can be a dangerous thing to do, but this time it wasn’t too painful! He loves this cheesy meatloaf recipe that I discovered about 18 years ago. I wish I could remember which cookbook I got it from, but unfortunately, I can’t! I do remember that it calls for mozzarella cheese, but I had to substitute cheddar this time around since mozzarella was not to be found in the fridge. That’s ok, though, because experimenting is what it’s all about, right?
1-1/2 lbs. ground beef
1 pkg. dried onion soup mix or dried vegetable soup mix
1/2 c. dried bread crumbs
1/4 c. ketchup
1-1/2 c. shredded cheese
In a large mixing bowl combine the soup mix, egg, bread crumbs and ketchup. Mix well. Add ground beef and mix very well. (I just use my hands and knead it all together). Press meat mixture into a 9×13 jelly roll pan.
Bake at 350 degrees for about 30 minutes or until done all the way through. Let cool about 10 minutes. Slice and serve! Yield: 5-6 servings.
