Here is one of the new recipes that I brought back from Charleston. It is absolutely delicious! The family began enjoying it at breakfast this morning before I even got to snap the picture! The only change that I made was to use cheddar cheese instead of Baby Swiss since I had no Swiss in the fridge! Serve with scrambled eggs and a side of bacon or sausage.
4 c. milk
1 stick butter
1 c. quick grits
1 tsp. salt
1/2 tsp. pepper
4 oz. Baby Swiss cheese, grated
1/2 c. grated parmesan cheese
Bring milk to a boil. Add butter and stir until melted. Stir in grits, salt, and pepper. Cook 5 minutes, stirring constantly. Remove from heat. Stir in cheese. Pour into a greased 2-qt. casserole dish. Top with parmesan cheese. Bake at 350 degrees for about 1 hour. Serve immediately.
This may be cooled and frozen if you desire to serve it at a later date.
