A friend of mine shared this recipe with me the other day. It sounded so good and easy that I knew I had to give it a try. It all goes in the crock pot, so it can blend its flavors all day and be ready for dinner when you get home after a busy day. I will add my changes at the end.
1-1/2 ground beef
1 c. chopped onion
1 clove garlic, minced
1 tsp. salt
1/4 tsp. pepper
3-4 c. grated cheddar cheese
1 (10oz) can enchilada sauce
1 (8oz) can tomato sauce
2 (16oz) cans chili or kidney beans
1 (16oz) can corn, drained
1 small can of olives, chopped
5-6 corn or flour tortillas
In large skillet, brown beef with onion, garlic, and seasonings. Drain off fat. Lightly oil crock pot bottom and sides. Place 1 tortilla in bottom. Spoon meat mixture, some sauce, and cheese over tortilla. Top with another tortilla and layer with beans, cheese, olives and corn. Continue layering, ending with cheese on top. Cover and cook on low for about 5 hours. Serve topped with sour cream.
Here are the changes that I made. After I cooked my meat and onions, I added a package of taco seasoning mix and cooked it following pkg. directions. Then I mixed the beans, corn, and tomato sauce in with the meat. I layered this meat mixture with the tortillas and cheese.
