This is the second recipe I brought back with me from Charleston last weekend. It is easy to make and tastes wonderful!
2 cans black beans, drained
1 can shoe peg corn, drained
1 medium onion, chopped
1 red bell pepper, chopped
1/2 c. vinegar
1/2 c. oil
1/2 c. sugar
1 container feta cheese
In a large mixing bowl, combine the beans, corn, onion and pepper. In a separate bowl, mix the vinegar, oil, and sugar. Stir it well, and pour over bean mixture. Stir well to combine. Fold in crumbled feta cheese. Chill for several hours before serving. If you like your dips to have a bite to them, add a chopped hot chili pepper to the mix!
*I prefer my dips to be a bit creamier than this dip is, so I took some of this and put it in my food processor for about a minute. It tastes amazing!!
