Many thanks to all our readers for their patience with us in recent weeks. Barbi was home last week and was able to get our 100th post written. Since she was busy with seeing old friends throughout the week, not much more got added to our blog! However, our readers have stayed with us! We have passed the 3000 mark for views of our blog!! Since we’ve been a homeschooling family with just one daughter and three sons, everyone has had to help out in the kitchen at times. The hubby has been known to make a killer omelet, and Ben can make an amazing sandwich. Yesterday Russ asked for asparagus to go with our traditional Sunday dinner. I was ok with it as long as he helped out with the cooking and allowed us to take pictures . “Not a problem!” he said. Russ didn’t follow a recipe but used various ingredients that he thought would enhance the flavor. And it was VERY good! No leftovers with this dish!
2 tbsp. olive oil
2 tbsp. butter
sea salt–to taste
pepper–to taste
1 tbsp. vinegar
In a large skillet heat the olive oil. Add the asparagus and cook until tender. Add salt, pepper, and vinegar. Stir to blend flavors. Add butter and stir until melted and asparagus is coated.
