Here is an easy side dish to make for your Christmas gathering. My son needed to take a corn dish to his youth group Christmas dinner the other night, and after a day of being away from home, I needed something easy. A friend shared this with me, and I am so glad she did. It does need an hour to bake, but it goes together quickly so little time is spent in the pre-baking stage! Sorry, no picture this time!
1 stick butter, melted
1 can cream corn (14 oz)
1 can whole kernel sweet corn, undrained (14 oz)
1 c. sour cream
2 eggs
1 box corn muffin mix (I used Jiffy)
Preheat oven to 350. In large mixing bowl, combine first 5 ingredients. Stir together well. Add corn muffin mix and stir well. Pour into greased 2-quart casserole dish. Bake for 1 hour or until set.
