Happy 2012, everyone! I hope you all had a wonderful ending to 2011 and a great new start to 2012. New Year’s Eve was great here…all four of my kiddos were with us! Barbi is already off to Savannah since she works this afternoon, and Ben, my Citadel Knob, leaves next weekend.
Part of New Year’s Eve was spent with Gardner cousins who came over for food, games, and fellowship. My sister-in-law brought this wonderful cheesy dip which she served with wheat crackers for an amazing flavor! It is easy to make, so give it a try for your next family gathering!
8 oz. cream cheese, softened
1 (15oz) can white corn
1 (15oz) can fiesta corn
Dried red pepper (to taste)
1-1/2 to 2 cups shredded Mozzarella Cheese
Drain both cans of corn and pour into mixing bowl. Mix cream cheese with corn until well blended. Spread into a 13×9 greased baking pan. Sprinkle generously with red pepper. Spread mozzarella cheese over the top. Use more or less of the pepper and mozzarella according to your taste. Bake at 350 degrees for about 20 minutes or until cheese is melted. Spread on top of wheat crackers! As you can see from the picture, it didn’t last long at our house!
