A Little Taste of Summer…in January!

I don’t know about your neck of the woods, but here in South Carolina, we just came through 3 incredibly cold days/nights.  Our night time temps dropped to the upper teens and the day time temps hovered around the mid-30s to lower 40s.  Thankfully today was on the warm side…64!  Oh, the joys of living in the south!

When the temperatures drop like they did this week, my family loves homemade soups.  We’ve had turkey soup, cream of tomato, and cheesy potato soups this week.  Tonight, though, we enjoyed a bit of summer with our dinner.  While standing at the freezer contemplating how to answer that famous question, “What’s for dinner?”  I noticed the  frozen fruits  I had carefully prepared last summer…peaches, blueberries and blackberries…and dessert ideas began flowing through my tired brain.  I decided on a blackberry-peach crisp!  Served warm with a dollop of whipped topping, it was just the treat we needed after such a cold week…a little taste of summer in January!

No recipe here today!  Just check your freezer for some of those delicious fruits you prepared last summer and follow your favorite recipe for a cobbler or crisp!
