I hope all of you are doing well and surviving this next round of heat. Did you try any of the recipes I posted last time? I made the watermelon granita and it was so amazing! It took a bit longer than the 2.5 hours to freeze to the right consistency, but it was well worth the wait. It is a perfect treat for a hot afternoon!
Salads are great for hot summer days as well. Have you made a 7-layer salad? Using frozen peas as one of the layers makes it taste wonderful!
Here is a recipe for Mango Salsa from my friend Lori. She found it on Pinterest as part of a recipe for Baja fish tacos. She enjoys serving it to her family on its own with chips.
Mango Salsa
2 large ripe mangos, peeled, pitted and chopped
1/4 c. minced red bell pepper
1 tbsp. lime juice
1 tbsp. chopped fresh cilantro
2 green onions, sliced (green tops only) or 1/4 c. finely chopped purple onions
1 small jalapeno pepper with stem, seeds, and membrane removed
Stir all ingredients together. Refrigerate. Serve with chips!
